This was opened and then left in the fridge and slowly consumed- and fully at its best after 2 weeks.

Really delicious, justifiably pricey Bourgogne Blanc.

Popped and poured; enjoyed over an hour period. The PCYM “Bourgogne” Blanc pours a straw color with medium viscosity and no signs of particles or gas. On the nose, the wine is youthful with notes of underripe pineapple, lemons, star fruit, and a mix of limestone and chalky minerals. On the palate, the wine is dry with medium+ acid. The finish is long and has chalky minerals. Honestly, this reminds me a lot of the 2021 Pierre Brisset “Cuvée Cassaneas” I had a couple of weeks back however the Brisset showed just a bit more focus and concentration. A really lovely “Bourgogne” and a delicious pairing with roasted chicken. Drink now through 2031.

Well. This messes things up. A village wine that has the poise and guts of most everyone else’s 1er cru wines. The oak and malo will surely integrate with time.

Very mineral and gravelly on the nose. Wonderful intensity for a Village While Burgundy. Ripe grapefruit with cleansing acidity. I’m glad I waited 7 years to have the first one. Quite impressive. Had a 2nd bottle 30 weeks later on 16th September 2023 with similar notes. Aromas of white flowers. Very mineral on nose (stony) and palate. Lemon and other citrus. Like the body, leanness and acid of a Chablis.

Nose has crushed flint, distant wood smoke, cold pineapple core, lemon curd tart, neutral-ish oak and lemon pith.

Palate has tart/sweet pineapple, lemon wedge, ripe white peach, tangerine peel, rich and round, great finish, great acidity! A long life still ahead for these bottles, at 8 years it's coming into the beginnings of a great drinking window.

You can really appreciate the Puligny-Montrachet & Saint Aubin fruits blended in this wine!
