Jul 4th, 2021Nose has dehydrated cherry, fresh raspberry, slightly smokey oak, old cedar closet, dried strawberry, over wintered mint, dried eucalyptus and dried blackberry.
Palate has delicate cherry + raspberry, semi-dried blueberry, fresh strawberry, cedar sawdust with still notable tannins.
Being hesitant, we only decanted about 20m before dinner, needs much more time in the decanter/glass, as after an hour it's finally starting to show it's worth.

Light garnet color. Dried strawberry, dried date, dried cranberry, sour cherry, lavender, violet, mint and hint of savory earthy notes. Very fresh and young nose for a 03’. Tannin is slightly bitter and green which bothers me a bit. Nice structure and bright acidity. Ok but I expect more. 13.5% abv
