Lighter & leaner style of Rosé from what we normally drink. Soft mousse & micro oxidation. Strawberries light orange citrus, cherries, blackberry reduction, watermelon right on the rind, edgy, grainy chalkiness, grey volcanics. spot of saline/sea spray, baguette crust, pink rose pedals & flowers. The acidity is soft & splendid. Excellent finish that is well balanced, has nice tension, smartly polished & persists nicely for minutes.

Sensational. An old-fashioned champagne made from Pinot Noir with skin contact, resulting in an onion skin colour and significant tannins. This is a serious pink wine with bubbles in it.

'Eye of the Partridge' is named as such because of the light orange/pink hue of the wine. Couldn't be more elegant. Bright red fruit drive the well-balanced acid with an undertone of delicate brioche.
