Bright pale straw with persistent fine bubbles and a lasting white mousse. Inviting nose of dried quince and straw. Medium palate of baked quince, dried flowers, white pepper, and brioche toast. Firm acidity is tamped down a bit by the yeasty character., but it’s ready for food. Enjoy with Asian or Italian in particular, but it will work naturally with just about any cuisine. Drink it when you buy it.
