It nearly seems a slight rosé gold colour in the glass with super plentiful bubbles. Glazed Nashi pear, spice, florals, nuts and saltiness come through on the nose. It’s captivatingly complex. In the mouth it has such a smooth yummy texture to it. Think apple strudel sprinkled with freshly toasted nuts.

Feb 14th, 2019Burnt nut flavors on the nose. First few sips were citrus enveloped with fruit notes (pear, green apple). Didn’t know what to expect from a grand cru champagne, I love it. Opens up more with time and the acidity becomes much more pronounced. Making some gumbo; needed to get in the mood for cooking gumbo... I feel ready now. “Sometimes it snows in April” and what better pairing for this weather and some soon-to-be delicious gumbo!
