Sedimentary Cellars Buellton

Crosby Wine Co.

Entity of Delight Chardonnay 2020

We like to go Camping on Figuera Mountain. Which allow us to combine wilderness with wine tasting either before or after. In Los Alamos CA is a funky tasting room. LoFi wines. These guys play vinyls and are essentially crazy. But here is the thing they make odd wines but sometimes they kill it. This is one of them. Rich and quite yellow clocks in at just 12.5%. From Crosby Wine Co. Fantastic fruit, apricots mostly. Jasmine really! Hint orange blossoms. Given the richness this could go for 2-5 more years. A benchmark for what Chard can do in the Sta. Rita Hills. A unicorn can’t even find anything or even the winery in Buellton CA. on the web. Might be gone. Ce la vie. — 5 months ago

Panther Creek

Schindler Vineyard Pinot Noir 2016

Located in the Eola-Amity Hills AVA, the ‘Schindler Vineyard’ is a very small site planted to Pinot Noir and set on marine sedimentary soils. A light whiff of salinity runs through the nose with kirsch and peat moss aromas that all meld in the glass. The palate has good freshness and energy with bright reed fruits that dance with shades of blood orange and minerals. The seductive mineral and dark fruit driven finish lingers long on the palate. Enjoy this fantastic new bottling over the next decade or more. Drink 2019-2029- 92

The Paring

Santa Ynez Valley Red Blend 2016

Last night we opened the 2016 Jonata The Paring Red Blend. From Buellton, California a blend of 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot and 10% Petit Verdot.

On the nose there is black cherry, blackberry, plum, black currant, roses, chocolate, spice, graphite and dark earth.

On the palate is black cherry, blackberry, plum, green bell pepper, black currant, herbaceous, spice, licorice and earth.

This is a great QPR full bodied wine with a smooth velvety mouthfeel medium + acidity and medium to medium+ fine supple tanninsthat moves into a medium + to long dark fruit herbaceous finish. It looks as though spring is on our doorstep, we had 70 degree weather today and for the Chicago area that is a thing. What a beautiful day and I hope everyone is experiencing the same. Please stay healthy and safe and look forward to a wonderful weekend. Nostrovia! 🍷🍷🍷🍷

Cuvée H Languedoc Red Blend 2021

Racine. Women in tech night at home. Juicy, sweet fruits. Expressive. Good balance. Really enjoyable.

Cuvée H is comprised of a blend of Syrah, Mourvedre and Grenache. The vines are farmed biodynamically and the wines are made using 50-80% whole cluster, which is rather uncommon in the zone. The result is dark fruit & herbaceous notes but with an appealing freshness that so typical of the best wines of the area.

Cuvée H is comprised of a blend of 70% Syrah, 15% Mourvèdre, and 15% Grenache. The vines are farmed biodynamically and the wines are made using 50-80% whole cluster, which is rather uncommon in the zone. The palate is full of cocoa powder, sedimentary soil, black pepper, and sweet tobacco. The weight of the wine is a little bit chewy and leads to a dry tannic finish, adding layers of complexity.
