My final btl, but this has really hit its stride. On the nose: cranberry, candied kumquat, lemon oil, very soft vanilla, all linked together to make a lovely dense cramberry citrus custard. On the palate, this has a soft mousse, adding some lift to the cranberry, kumquat and honeyed flavors all energized by a fantastic acidity...good density on the finish. Very nice. — 19 days ago

This is complex & quite profound. Nose shows terrific tension between the lemon, lemon peel & kumquat and the toasted brioche with fresh hazelnuts & freshly made creme brûlée.
Lovely mouthfeel, v. creamy & quite rich yet impeccably balanced with electric acidity, super fine froth and a hint of minerality in the background. Great depth, purity and precision, but most of all, finesse.
This beats most Champagnes flat out.

2010 Dom Pérignon Champagne- The 2010 Dom Pérignon Champagne is a stunning new wine that is one of the stars of this vintage. It is hard to believe how long this has been released past their 2009 vintage and after trying this wine, the patience definitely paid off. Needing an hour in the decanter to fulfil it’s full potential, the wine slowly unveils scents of almondine, toasty brioche and cantaloupe alongside Meyer lemon zest all take shape on the nose. The palate shows a soft mouthfeel and silky mousse, yet remains very tightly wound. Ripe green apple and kumquat zest tones combine with minerals, sourdough bread and smoky undertones, with a light dusting of salinity. Confectionary nose that is teeming with energy. Awesome minerals, sugar snap peas and airiness. So clean and intense. Awesome. Has that 19 lift. Rich, yet also so energetic and crisp. Has terrific fruit intensity like apricot and kumquat but finished mineral and shows its limestone footprint. So good. The NV Joseph Perrier ‘Blanc de Blancs’ Champagne includes 15% reserve wine and was aged on the lees for five years prior to disgorgement. Bright lemon zest and crushed seashells mingle with Gravenstein apple and shades of nutmeg infused sourdough bread all parade on this beautiful bouquet. The palate is fresh and vibrant with wonderful verve and a soft texture. Kumquat zest infused Challah bread and a bright salinity combine with fresh Granny Smith apple and shades of marzipan on the palate. Popped and poured. In the glass, a pale straw color. The nose was incredibly fresh, like a cool breeze on a Spring day. Notes of pomelo, kiwi fruit, and wet stone. On the palate, orange bitters, kumquat, lemons...seemingly all of the citrus fruits. Great acid contributes to a long, clean finish. Bouquin-Dupont Vieille Reserve Extra Brut Grand Cru Champagne: Vibrant. Profound. Exhilarating. Comprised of 100% Chardonnay grapes and aged for an impressive 7 years sur lie (many of the world’s top Grand Cru Champagnes age for a similar length of time on the lees) this champagne displays rich & focused flavors and aromas. White peach, apricot, lime peel & kumquat to name a few. Overall, there’s an elegant intensity like no other in recent memory that I recall hence making this grand cru stunningly spot on. This is much better on night 2. It is a style that is mid-way between purposefully underripe Aussie Semillon and riper, waxy, honeyed interpretations. Nose has tart kumquat in tandem with a Semillon waxy, lanolin thing, but toned down. In the mouth, it juxtaposes the dark, low toned character of Semillon with good acids and freshness. Dark as muddied apricot juice. Slick and unstable head whisking away in oily retreat, with rapid lacings of unraveling ghost smokes turning will-o-the-wisp. Apricot-pineapple with a sweet kerosene note. Bananas and Honeycomb cereal. Lime pith and soursop secondary smells. Plantains dried at medium ripeness, lemon pith, and tangerine threads on the palate. Connecticut tobacco leaf. Chalky lemon. There is such an interesting dichotomy between the malt caramel notes initially, and the overwhelming, cancelling pithy citrus, which obnubilates the former. Kumquat and starfruit combine on the finish with lemon tart candy and grapefruit reduction. .
