Destihl Brewery

Haze of the Dead

Hello opacity! White ash head that looks stable, but drops quick. Sheet lacing that yawns like a cavern complete with stalagmites and ‘tites. Gorgeous nose of honeyed fig, tangerine, Meyer lemon, pink grapefruit, banana-coconut pie and pineapple sorbet. Zippy and lively metallic entry brings grapefruit oil in abundance, lime zest, lemongrass, lemon verbena, chive, starfruit, green mango, key lime, white pepper and ruby grapefruit pulp and pith. Finishes minerally, concentrated and borderline tartaric. #destihl #destihlbrewery #ilbeer #boycottbland #hazy #hazyipa #ipa #dipa #doubleipa #hazydoubleipa #iipa #citrahops #simcoehops #indiapaleale #ale #beer #bier #birra #cerveza #biere #cerveja #gratefuldead #hazeofthedead #destihlhazeofthedead #hazeofthedeaddoubleipa — 17 days ago

Apothic Sparkling Red Limited Release
Surprisingly refreshing sparkling red, even after reading the description I was pleasently surprised that it wasn't sweet.

11/19/20 at Amah for Mary BD. Still an interesting sparkling red though lacking complexity but makes up with intriguing acidic yet ripe fruity profile that went well with the fried fish and hock dishes especially with the bubbles. — a day ago

Domaine Carneros (Taittinger)

Brut Carneros Sparkling Blend 2010

Sunday morning late brunch, bacon, eggs, fresh-baked coffee cake. Obviously calls for mimosas. This is what you need for a superior mimosa: OJ, a little splash of Cointreau, and superior bubbly. This was certainly a superior bubbly. — 9 days ago

Brut De Noirs Sparkling Blend 2002

This wine was built for aging. 2002, fresh as can be. Nice fruit, nice yeasty nose. Absolutely delightful. Rated the same 9.5 over four years ago. And we have a couple more in the cellar. 😀 — 3 days ago

Faire la Fete

Crémant de Limoux Brut Sparkling Blend

Light salmon in color.

Strong nose of strawberries, citrus, lemons, apples, yeast, spices, white pepper, light herbs and earth.

Medium plus in body with medium plus acidity. Crisp and refreshing with small bubbles.

Dry on the palate with citrus, lemons, green apples, grapefruits, bitter herbs, spices, vegetables and earth.

Nice tangy finish with tangy limes.

This French sparkling Rosé is nicely balanced. Crisp and refreshing, good for the pool, easy drinking and tangy.

Good by itself or with food. I paired it with a nice day by the pool. Nice and engaging.

12.5% alcohol by volume.

89 points.

J. Schram Sparkling Chardonnay Pinot Noir 2007

This 50-year anniversary special bottling of 07’ is hands down the best sparkling not named Champagne that I’ve tasted.
The nose reminisces a great BdB with pear, green apple, citrus (mainly lime) peel, white flower, brioche, and hint of seashell. Initial taste follows the nose, then come grapefruits, ginger spice, pie crust, and chalky minerals. The palate is broad, savory yet refreshing, with creamy mousse playing nicely with penetrating acidity.
A really profound bottle.
