On the nose, this is dark cherry and warm, soft raspberry. On the palate, this is clean and again warm... Cherry... Intense cherry. But not in a sweet way. Earthy. Pepper. Tannin still very present fitteen years after the vintage giving this thing shape. Still some acidity here as well. We paired with steak... Would a stew be a better pairing? The finish feels one note back to that earthy cherry with a bit of pepper... Long though. Outstanding. — 5 months ago

The 2019 Pouilly Fumé Silex shows an initial tenderness, sitting quietly and not shouting that it's made it into your glass. This is a wine that has its act together, feeling integrated and balanced with plentiful concentration and a savory long finish. Last bottle of the ‘18. It’s pretty much at its peak. Intense limestoney minerality balanced by just enough ripe fruit green apple/citrus pith fruit. A very subtle green herbal note in the background. Round-textured in the mouth initially, u til the intense minerality puts on its geology show-and-tell. Nice acids.
